Braised Pork Steak With Mushrooms And Olives


– 4 pork steaks
– 2 slices bacon
– seasoned flour for dredging
– 1/2 onion
– 4 cloves garlic
– 4 oz sliced fresh mushrooms (best with portabellas of course)
– 1/4 c. sliced black olives
– 1/2 c. red wine
– 4 T italian parsley (rosemary is also good, I use whatever is on hand)


1. Fry bacon (reserve chopped bacon for later)
2. Dredge pork steaks (or chops) in seasoned flour
3. Sautee’ in fat from the bacon until browned on both sides
4. Sautee’ onion, garlic, mushrooms in the fat
5. Add wine and reduce by 1/2
6. Add olives and parsley
7. Place pork steaks in casserole dish covered with other ingredients
8. Bake for 1 hour 15 minutes at 325
9. I like to serve the meat on the side and put the mushroom sauce over the rice or potatoes
